Happy Birthday Muffins
So the Lanza - Osias family is getting old. The Captain turned the big 3-0 in August and my middle-age fate is closing in fast. On the morning of his birthday our bare vegan pantry left much to be desired. I wanted Muffins. Blueberry Muffins. Birthday effing Muffins. So I looked at what I had and tried to find a recipe that would work for me. This is adapted from this recipe to get rid of the icky refined sugar. I love these muffins because they aren’t overly sweet, but have the perfect cakey texture. YUM. Preheat oven to 325.
2 1/4 cup ww pastry flower
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
3/4 cup almond milk
zest 1 lemon
2 tablespoons coconut oil
2 teaspoons vanilla
6 tablespoons unsweetened applesauce
3/8 cup maple syrup
10 drops of liquid stevia
11oz of organic blueberries
Mix the wet ingredients in a large bowl and the dry in a small bowl, then slowly incorporate the dry ingredients. Once well combined, gently fold in the blueberries! Bake for 25 minutes then enjoy the delicious wonderfulness with a pat or two of Earth Balance butter.
