Black Bean Mango Quinoa

photo 1 copyI love this meal. The recipe originated from one of my fave cookbooks, Veganamicon. I honestly haven't looked at the recipe in years, so I have no idea what I added and what was originally in the dish, but what I do know is that it's freaking delish!!! Perfect for an end of summer bbq!!! I would love some one to make this for me right now!!!! Like right this second!!! Hello!? 1 mango, ripe and diced

1 red bell pepper, diced

1 can of organic black bean, drained and rinsed

1 avocado, ripe and diced

1/2 of a red onion, chopped finely

1-2 cloves of garlic, minced

2 tablespoons chopped cilantro

[optional] jalapeño, minced finely

2-3 tablespoons of red wine vinegar

1 cup of quinoa

2.5 cups veggie stock with a pinch o salt

photo 1Cook quinoa via package instructions, just like rice ;) Then mix all of the other ingredients together. Once quinoa is cooked toss with veggies and top with red wine vinegar. Mix well and serve immediately or let set at room temperature. Tastes yummy either way!
