Babies in Bloom

Babies in Bloom is an adorable boutique and so much more located up in Vista. They have an amazing selection of baby and mommy goodies and on top of that they are the only Birth Center in North County! They also offer a whole host of classes, I’m thinking of checking out a lactation class next week!! YAY!!! Fun times await!!!! Side note: I’m a HUGE fan of the tea I’m holding in the above pic, Organic Third Trimester Tea, so yummy!!!

Black Bean Mango Quinoa

photo 1 copyI love this meal. The recipe originated from one of my fave cookbooks, Veganamicon. I honestly haven’t looked at the recipe in years, so I have no idea what I added and what was originally in the dish, but what I do know is that it’s freaking delish!!! Perfect for an end of summer bbq!!! I would love some one to make this for me right now!!!! Like right this second!!! Hello!? Is there anybody out there that wants to cook for a massive pregnant lady!? No… C’est la vie. Enjoy!

photo 2Feeds a whole bunch a folks

1 mango, ripe and diced

1 red bell pepper, diced

1 can of organic black bean, drained and rinsed

1 avocado, ripe and diced

1/2 of a red onion, chopped finely

1-2 cloves of garlic, minced

2 tablespoons chopped cilantro

[optional] jalapeño, minced finely

2-3 tablespoons of red wine vinegar

1 cup of quinoa

2.5 cups veggie stock with a pinch o salt

photo 1Cook quinoa via package instructions, just like rice ;) Then mix all of the other ingredients together. Once quinoa is cooked toss with veggies and top with red wine vinegar. Mix well and serve immediately or let set at room temperature. Tastes yummy either way!

This is my second week of 2 day a week posting and I’ve failed miserably. Just failing at life, but there were far more important things going on. Yesterday my little nugget, Franklin, landed himself in the doggy ER for nearly 13 hours and I was a solid wreck. My little guy is sort of the love of my life, don’t judge, I was destroyed. He jacked his tummy by eating really hard plastic and was throwing up blood… Yes, it was terrible, absolutely terrible. Luckily, I took him in early so that the plastic couldn’t make it through his intestines and do any real damage. He still has some healing to do, so say a prayer for my love if you do that sorta thing!!! Much appreciated!
